My husband loves french fries but he only has them on occasion. I always find a bit difficult to cut them and I am not a fan of food processors or many gadgets, I prefer the old-fashion way, a good sharp knife; however, french fries presented a challenge – just to get them perfectly long and even. I came across this gadget from the 60s or 70s which did not need electricity and promised to transform the potato in perfect french fry pieces. It was a NOS (new old stock) so I decided to get it. Well, when it arrived, hubby and I were excited to try it. In amazement we saw this simple gadget work – it is called the Miracle French Fry Cutter from Ecko. By the way, if you are like me who prefers simple and not many parts, you can find it at Etsy or Ebay. I saw a few of them – NOS – listed. It is made from sturdy metal and has a very sharp cutting grid, which one has to be very careful handling. It needs to be dried very well after washing it. Oh, and one more thing, after cutting the first potato, don’t remove it, the next potato will push the first one out, so it is easier.

When I was a boy we had one very similar.
You may try par-boiling the cut potatoes to ensure they will cook thoroughly. Normally just bring the fries to a boil, remove, dry them, and then fry them.
Nevertheless having fries that way will take you back before fries were all frozen at some processing plant to be used six weeks later.
